"Better than Potatoes" Mashed Cauliflower


1 head of cauliflower

2 Tablespoons cream

1 Tablespoon light butter

2 ounces sharp white cheddar cheese

Salt and pepper, to taste



1. Clean and trim the cauliflower, breaking it into medium sized pieces. Place in a microwave-safe bowl with cream and butter. Microwave, uncovered, on high for six minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another six minutes on high.

2. Remove from the microwave and put into a high speed food processor or blender, along with the cheese. Puree until smooth.

3. Season with salt and pepper to tast. Enjoy!
